Salmon & soft cheese baked potato

This was pretty nice. The cheese and lemon went well. Salmon was bit fishy. Joe put me off because he said it had bones in that you're supposed to eat... I didn't put the capers on it because they're just eww.
Joe: "Tasty. It was a bit... lemony. But it was nice, it was nice, nice."

Spanish bean stew

Chicken thighs, chorizo, cannelini beans, onion, tomato and potato. The sauce was nice with bread dipped in but I don't really like the beans or the chorizo...

Chicken parmigiana

Chicken in breadcrumbs with mozarella and parmesan. Made twice as much sauce as the recipe suggested and there still wasn't enough :(

Tangy couscous salad

This was yummy in my tummy! Tesco didn't have any couscous so it's bulghar wheat with courgette, feta and lemon juice. Would be good as a side for a BBQ or something.

Vegan tomato & mushroom pancakes

These were surprisingly successful and easy to make. Just 140g self-raising flour and 400ml soya milk for the pancakes. Then cooked mushrooms and tomato on top.
Joe: "Very nice. The pancakes were crispy."

20) Healthy coleslaw

This would probably be nicer if it wasn't so healthy. The dressing was mostly yoghurt with some mayonnaise and mustard - more mayo needed! It was also bare effort to grate everything so I advise people not to make this unless you have an electric grater.

Spiced scrambled eggs

Another recipe that tastes nicer than it looks! The onion and tomato are good additions to scrambled egg. Clearly didn't put enough chilli in because Joe said, "isn't this supposed to be spicy?"
Joe: "It was average."

Sausages with winter veg mash

This was just normal sausages and mash but the mash had parsnip and Brussel sprouts in it. It was good because you couldn't taste the parsnip but the Brussel sprouts were a pain because we had to chop and wash and peel and slice them.

The nutritional value of parsnips:
The parsnip is richer in vitamins and minerals than its close relative, the carrot. It is particularly rich in potassium with 600 mg per 100 g. The parsnip is also a good source of dietary fibre.
Joe: "Sprouts make me smelly but they filled up my belly. Now pass me some jelly... I don't want any jelly."

Didn't have this late-night but I don't think it would change the taste anywhos. It was really nice actually even though it looks like baby food. And it had egg in it so it was like rice carbonara!

Cheesy mushroom omelette

Made this for Joe's breakfast/lunch even though he doesn't like omelettes but it was SO good he has been converted!
Joe: "It was a lot nicer than I though because it wasn't too heavy because it was quite a thin omelette and it was nice. And I had salad for breakfast."

Spicy root & lentil casserole

My sweat and blood went into this casserole... I cut my finger instead of the carrot. Duhhh. It was OK, the naan bread was the best bit.

Bacon & parsley hotcakes

These are basically bacon and cheese pancakes (I didn't have any parsley). They were good but needed lots of ketchup and were really filling.
